Just finished a magnificent dinner at Oxlot 9 at Southern Hotel ~ Covington, Louisiana. One couple worked at Brennan’s in New Orleans, another in Napa Valley, and the third at Veranda in Birmingham (via New Orleans). All are owned and operated by married couples with young children who chose to come here. I was struck by the similar stories at Del Porto, LOLA, and Oxlot 9. Seems ironic to leave New Orleans for amazing food but I visited at least three magnificent Covington restaurants.
